Nillumbik means shallow earth, so named by the original inhabitants to signify a lack of top soils lost to undulating terrains. The western edges of Yarra Valley are covered by a harsh and hilly topography which can challenge winemakers as the unaccomodating soils and aspects produce grapes of concentration and intensity. There are four acres of Pinot Noir at Nillumbik and the vines are now fifteen years old. Grapes are sorted and crushed before inoculation and fermentation in traditional vessels, closely monitored for the maximum extraction of flavours and tannin. Estate grown and bottled, the finished wine is matured fourteen months in a selection of new and serasoned, exclusively French oak barriques.

Volumes are kept small and the attention to detail is very high, all the work is done by hand. Pinot Noir grapes are hand picked and completely destemmed, mother nature then initiates fermentation through her wild indigenous yeasts. A bold style of cool climate Pinot Noir with an intense palate and earthy tannins.
A deep crimson hue sets the tone. Aromas of cherry, raspberry and rich plum are complemented by earthy notes. Refreshing acids and firm tannins support the medium to full bodied palate. A well balanced wine with the solid structure and weight of fruit to please those who demand flavour and depth in a Pinot Noir.
